Every day for the last 25 years in the US, the minute I mention that I am Moroccan, someone asks me where they can eat good Moroccan food. To be honest my answer is always very vague, because I don’t know of any. There are some Moroccan restaurants here and there with a 6-course meal followed by a belly dancing show (not Moroccan at all).
In the US, you can find every sort of take-out food place; from Chinese, Mexican, Sushi, Indian, Mediterranean to all sort of vegan / vegetarian, organic etc… fast food with all kind of variations. One thing we don’t see is a take-out healthy Moroccan farm to table place.
Morocco is known for its cuisine, which is admired and imitated throughout the world. The country's cooks make heavy use of spices and local ingredients, such as saffron, mint and olives. Couscous is Morocco's premier food, but there is much more to the Moroccan gastronomy than just that. Nowadays everyone travels all over the world, and with the globalization and the availability of every product everywhere, everyone knows good food from bad food, and people mix all types of foods in their daily choices.
People travel from all over the world to Morocco to try the food, which makes it the second destination in the world for food only. So why not take such a beautiful cuisine rich with flavors, spices and variety and introduce it to the American consumer in a much more simple and accessible way, with a very simple menu focused on key ingredients such as: Couscous which is an extremely healthy grain. (One cup of cooked Moroccan couscous has 176 calories, 36 grams of carbohydrates, 2 grams of fiber and 6 grams of protein. It's sugar- and fat-free and contains about 66% of the recommended daily dose of selenium). Whole wheat couscous is more nutritious that the regular variety. It's made from whole wheat durum flour.
Every time Moroccan food was introduced in restaurants, it was done in a very overwhelming way! The restaurant owner’s design menus around the main dishes that we usually cook for weddings or parties. But no one ever thought to actually show that Moroccan cuisine also consists of very healthy choices like a huge variety of vegetarian dishes of cooked salads that also can be made and considered vegan.
Basically, Nomad Couscous will have a good selection of food and ingredients for all types of palettes and dietary choices by implementing local and fresh ingredients as well our concept targets Millennials since it’s a takeout with only few communal tables.
We will partner up with all the delivery apps such as Uber Eats, Postmates, DoorDash and others, and we will have our own app for our own delivery and event catering. We will be hiring local young dynamic cooks and food preps. Our prices should stay below a certain threshold to allow college students, young entrepreneurs and other food curious foodies to experiment Moroccan food every day, offering them a variety of choices without ever getting bored and within their budgets. Our moto is to add to the foodie choices one more weekly craving = Moroccan food.
Moroccan food should be on everyone’s schedule at least once a week. We are working with designers to offer the simplest and customer friendly and on-site pick-up restaurants as well as an e-commerce website that will allow our food lovers to navigate through our menus and choices and create their own couscous platters or other little salads or tajines with a strong emphasis on fresh local produce and ample variety for vegetarians, pescatarians, and carnivores alike, the lively restaurant will serve simple “Modern gourmet Moroccan” cuisine: revisions of traditional cuisine and international dishes with a Moroccan twist.
