🌱Moroccan Medley Salad Bowl
Chopped avocado, cherry tomatoes, bakkoula, taktouka, carrot salad, preserved lemon, couscous salad, flaked organic almonds, olive oil, 2 lemons to serve.
🌱Couscous Salad
Soft dried apricots, preserved lemon, unsalted shelled pistachio nuts, olive oil, lemon juice and parsley
🌱 Artichoke Salad
Green peas, purple olives and preserved lemons.
🌱🥕Carrot Salad
Chermoula cumin, paprika, parsley, coriander, lemon juice and olive oil.
🌱Bekkoula
Spinach and kale. (common mallow)
The leaves are chopped, steamed and then sautéed with olive oil, spices, olives and preserved lemons. The resulting cooked salad is eaten as a dip with Moroccan bread.

🌱🌶Chermoula
Chermoula is a North African marinade full of flavors that we use to season our favorite foods. It’s based out of parsley, Coriander, cumin, paprika, olive oil and lemon juice.
🌱🍋Preserved lemons are beautifully fragrant pickled lemon, their flavor is unique which makes them irreplaceable in Moroccan cuisine, where they are usually added to tagines and salads.
🌱🌶🌶 Harissa
Originally from North Africa, harissa is a hot paste/sauce that contains mainly chili peppers, red peppers, garlic, salt and olive oil. Across North Africa, you will find numerous variations of the harissa depending on the region (or the family) since some recipes include herbs and spices.
We will be serving Moroccan Harissa.

🥘 Tagine pot
A tagine is a conical earthenware pot and the dish prepared in the tagine pot shares the same name as it’s cooking vessel. So, tagine is a dish and also a cooking pot. Historically, the nomads in North Africa used the tagine pot as a “portable oven”, allowing them to prepare food at any time while moving around.
